Mexican Cornbread Casserole

I got the original recipe from my husband's Aunt about 10 years ago, and it's been a hit in my family ever since! I've emailed the recipe, sent it in a text message, and even posted a pic of it on FaceBook (but haven't had FB for 2 years now, yay me!)
Anyway, the original recipe was not "Mexican", so to speak. It was more homestyle, using canned cream soups and so forth. Well, I have made that version so many times that I decided it needed a change.

After having the spicy mexican cornbread on the side with tortilla soup at a local restaurant, I decided to try converting it to a casserole. Here is what I used:
Ingredients
2 pkgs Cornbread Mix
2-3 pounds ground beef
1 pkg taco seasoning
1 can Mexican Salsa
1 can chopped green chiles
1 jar salsa verde
1 jalepeno seeded & chopped
1/2 cup pico de gallo
1 bag shredded cheese
2 bags frozen whole kernel corn
Instructions
Brown ground beef & drain. Mix in taco seasoning, both salsas & half of the chopped jalepenos into ground beef to your personal taste and set aside. 
In a separate bowl, mix cornbread mix according package instructions; fold whole kernel corn into cornbread mix. Stir in other half chopped jalepeno and 1/2 cup of pico de gallo.
Pour 1/2 batter into oblong baking dish. Layer shredded cheese on top of first half of batter. 
Pour ground beef mixture over cheese and batter. Add another layer of cheese on top of ground beef. 
Pour other half of batter over ground beef and cheese. Spread to make sure all of meat mixture is covered. Bake at 375 for 20 to 25 min or until cornbread is golden brown.
You can use as little or as much of each mixture as you like. Adjust to your own taste! Enjoy!!

Fashion Friday & A New Blog

Introducing Stvck ^ (stuck up)

My daughter started her own fashion blog a few days ago. Here is a snap shot of it.
Her name is Dajha Symone, but you will notice that her 'about me' name says "dae", which is her nickname. This is how her first post got it's name. "Outfit of the Dae". So clever and cute, don't you think?

The blog name, Stvck ^ (stuck up) is the name of her future clothing line. She plans to major in fashion design. She has an eye for fashion that is unbelievable! Here is just a quick look at some of her past looks...

Call me crazy, but I noticed that she loves the left side of the camera frame. You will discover also that she loves accessories and is addicted to shoes (but what girl isn't). So check out her blog sometime, and remember her name, you may hear it again someday.

Fashion Fridays: Prom 2012

Evidently the new trend is dark lips???

My daughter's Prom was this past weekend. She wore very dark lipstick. I hated it. She loved it.
This lip color is by Maybelline #835, Dazzling Plum. She used her NAKED palette on her eyes. Here's more of this trendy lip look as seen on  Coco and Creme
This was my baby girl's prom look. So that you know a little bit about her, she will begin pursuing her degree in Fashion this fall. She is so far out-of-the-box, and she never "goes with the crowd". She created her own "Prom Swag". I admit, after her whole look came together, it did look really good. So let's break it down...I have to share, because it looks effortless and it didn't cost me a fortune!

Dress: Cache $178
Boots: Baker's $89
Jacket: $3
Gold Snake necklace: $1
Wooden necklace: $1
Bracelets & Ring: $5 each

Dajha looooves our local thrift store. They know her personally! The jacket and necklaces came from there. The bracelets and ring came from a jewelry sale hosted at my job, everything was $5 each!! I was so not buying her the Jeffrey Campbell boots that she originally wanted, so when we were in Dallas shopping the week before prom, we stumbled upon these. Much better price point than the $200 JC's.
Fashion Fridays on my blog will be totally dedicated to her style, ideas etc. Look her up a few years from now, you never know what the future holds!!

I love me some OPI...

I posted this pic on instagram this morning, and since today is TopCoat Tuesday, I figure I should post it on here too. So here you go...this is one coat of OPI Chop-Sticking To My Story with OPI Extra-Va-Vaganza as a glitter accent, and all topped with SV...

It looks a little blurry because I uploaded the pic using my phone. It did the same thing with my Essie Aruba Blue post, which can be seen here. Well blurry or not, I love this mani!!

Fashion Friday: DIY Bobby Pin Necklace



There's nothing like a good DIY project. This one is super easy! All you need is bobby pins and ribbon.

Be creative and alternate colors, or use one solid color like I did here. I tied this tightly around the neck because it looks great as a choker...gives it lots of African Swag!! Alternating colors like black and gold would give this necklace a greek goddess, egyptian-like feel. 

You could also lightly coat some of the bobby pins with a rusty red and use leather instead of ribbon to give it a more earthy, indian sort of feel...the possiblities are endless!! This is such a statment piece.
